I'd mention Orphaned Land, but that's more progressive folk metal with some black metal thrown in. They are interesting because their music basically takes Hebrew and Arabic influences and mixes them. Awesome stuff!

Also, if you wanna include Indian music as ''eastern'' (a bit of a stretch?), try Freak Kitchen's ''Land of the Freaks'' album, specially Teargas Jazz, which is as close to Indian classical music mixed with prog metal as it gets.
